lighten up

the citizens of logan circle need to take a chill pill today.  a man nearly lost it over an unscannable item in the self-checkout lane at the local safeway.  as i was walking home, a homeless man and a dog-walker had some words, including those of the four letter variety, across from a park full of children.   and let me tell you, this episode of law & order: svu is particularly angry.

maybe a brownie would brighten their days?  not good enough.  a brownie with a peanut butter chocolate chip cookie crust?  we are not your average neighborhood, we’ve seen a brownie or two in our day.  well then, what about an 8 x 8 pan of brownies with peanut butter chocolate chip cookie crust, layered with double stuff oreo’s?  now we’re happy talking.  and no more of those four letter words near the little ones!

sneaky brownies

  • preheat oven to 350.  grease 8 X 8 pan.  and i repeat, great 8 x 8 pan.  otherwise those brownies get all comfortable in their little nest and don’t want to come out.
  • whip up a batch of your favorite cookie dough.  or do like i did and buy a batch of peanut butter chocolate chip dough from your local supermarket.
  • buy oreo’s.
  • throw together a batch of brownie batter.
  • press the cookie dough into the 8 x 8 pan.  it will be somewhat thick as it cooks much longer than the suggested baking time, so it needs a little cushion.
  • layer oreo’s onto the cookie dough.  you’ll most likely use 16.  but make sure to have a full carton on hand…you know, for snacking.
  • pour the brownie batter over the cookie dough/oreo concoction.
  • beware: the 8 x 8 pan will be rather full.  and heavy.  do some bicep curls.  and put the pan on top of a cookie sheet if you fear it baking over.  mine did.
  • bake for 30-45 minutes, depending on the pan and the thickness of your brownies.
  • pull from oven, top with ice cream, eat straight from pan.  that’s the only way to do it.
