cookies & karma

i just wanted to warn you all that i think i’m on the verge of a major life change.  i have no clue what this major change will be. but, like the tickle in your nose before a sneeze, i feel it coming.  and it’s going to be big.

the stars have kind of aligned recently here in the 7-11.  i’ve been baking (which reminds me, i need to pull 2 sticks of butter out of the old frigerator) and cooking up a storm.  i went to pilates twice last week and managed to pull myself out of bed at 5:15 a.m. to join running practice on both tuesday and friday mornings.  i was a super star at both my jobs while managing to stay out til 3 a.m. on friday night.  i’ve been a better friend recently and made a pretty good effort at staying in touch with homies both near and far.  and to top it all off, i think i’ve perfected the art of the mug cookie.  if that’s not some good karma, then i don’t know what is.

and if it’s not good karma you’re in the mood for, then try the mug cookie.  i’m always in the mood.

jenny’s soon to be world famous mug cookie (because the stars aligned and said so)

  • get out your favorite coffee mug.  maybe your kid decorated it when she was 4.  maybe it’s from your alma mater.  or maybe you stole it from your ex-boyfriend.  he’s a real dufus you know, you should use his mug to make a cookie.
  • add 5 tablespoons flour (whole wheat flour works, too!) + 3 tablespoons sugar (or splenda, you sassy little vixen).
  • throw in a pinch or more of salt…i like my cookies salty, it’s a good way to balance the sweet.
  • splash of vanilla.
  • about a teaspoon of oil.  i’ve been using vegetable.  cuz if it’s vegetable, it’s got to be healthy.
  • just enough water so that you can mix the batter in the mug.  it should be a little coarse and not tooooooo runny.
  • now, for the chocolate chips, or any other crazy add-in.  i hear sprinkles work well.  so do nuts.
  • pop that mug in the microwave for 1 minute.  snack on leftover chocolate chips.
  • take it out.  fluff it up.  drool while it cools.  delight in your own personal piece of happy.
and last but not least…
  • wait for jenny’s life to change in a big way.  it’s going to happen.
